Clare O’Brien holds no truck with culinary fiddle-faddle. She likes honesty on the plate, good old-fashioned Irish cooking. Hardly surprising, as a sister of the ‘Farmgates’, Kate and Morag, it appears to be a family philosophy. Clare specialises in the Irish homebaking repertoire, classic cakes, for example, just crying out for a hot cup of Barry’s Tea. The Lemon Drizzle, is a springy sponge with added gravitas courtesy of the lemon syrup, the sugar-crystal crunch, a veritable citric rhapsody. But it is her award-winning Bakewell, sublimely rendered right down to the crumbling, melting pastry, which truly illuminates her abilities. It is notoriously hard to produce gluten-free pastry, harder still to produce excellent gluten-free pastry. You see, all Clare’s produce is gluten-free. Mind you, Clare is not an excellent gluten-free baker; she is simply an excellent baker whose products happen to be gluten-free.

Clare sells her cakes, breads and savouries at Mahon Farmer’s Market every Thursday. She also sells to restaurants, cafes and delis.
