We once descended upon Toddies, having given a generous five, or maybe six, minutes notice, with a pack of hungry, starry chefs one evening. Did Pearse O'Sullivan bat an eyelid? Not as far as we could see. He simply fired out wonderful food to the crowd in the dining room, and won the praise – and the applause – of all concerned.

He's made of tough cheffy stuff, Mr O'Sullivan, so maybe the benefit of growing up in hotels in Jamaica and the U.K. is, in fact, the ideal equipment to help you cope with the unexpected vicissitudes of life. His resilience has seen Toddies morph smoothly through a series of relocations in and around Kinsale ever since it opened back in 2001, propelled by the chef's clean, clever modern food. After almost a decade, O'Sullivan is still up for it, especially since the move to the Bulman pub at Summercove has let him find exactly the right sort of groove in which he most enjoys working, and you get that energy in his food, that joy in dealing with the unexpected, that love of a challenge, whatever it might be.
