Gill Carroll is rewriting the book of healthy cooking with her work in 37 West. She has already created one of the hippest new catch phrases with her “Healthy is the new sexy” tag line, but as she told The Irish Times: “It isn't about low-calorie diet food. It's about using fresh ingredients packed with health benefits, made from scratch and that taste great.”
Now, parse that line carefully: the new healthy is about fresh foods cooked from scratch, foods that taste great, foods that are themselves packed with health benefits thanks to their provenance and quality.
Low-cal? Who needs or wants that cardboard cuisine. This is what you want: the famous 37 West chicken melt with its signature Griffin's sourdough bread; a traditional ham sandwich with Cuinneog buttermilk brown bread; the Superfood salad, packed with beets, broccoli, quinoa, feta, tomatoes, greens and seeds; the goat's cheese, spinach and sweet potato bake; the lamb and chorizo skewers; the fish cakes with Greek salad; the gorgeous drinks, the excellent coffee.
But 37 West also scores as a community player, with classes, initiatives, support for charities, and the occasional half marathon thrown in just for fun, and just for raising funds. Yes you come to 37 West for the healthful, delicious food. But you also come because Gill and her crew are players, players with the zeitgeist of the city, and that city, of course, is Galway. 37 West is the new healthy, and the new sexy, too.
