Perfection is as rare as hen’s teeth. Yet here we are at the end of a meal in Belfast’s Barking Dog restaurant, and the only term we can use to describe what Michael O’Connor has cooked for us is: perfection.
Perfect crispy pork belly bites with pickled carrots and apple sauce. Perfect steak tartare with toasted soldiers. Perfect beef shin burger with horseradish mayo and chunky chips. Perfect squid ink linguini with Portavogie prawns and smoked chilli butter. Perfect espresso creme brûlée with orange biscotti. Perfect espressos.
This sort of over-achieving with every dish explains a simple fact about the Barking Dog: for many food lovers, this is their favourite restaurant in Belfast. They come back time and again because no one makes a better burger, or better pasta. Mr O’Connor and his partner, manager Michael Fletcher, are flying high.
