The Grass Roof Cafe
Aisling Stone used to operate out of a food cart that she called Homecooked, and the mantra of Home Cooked Food remains her motto in the Grass Roof Café at the Organic Centre in Rossinver. But it’s what she does with that home cooking that makes her food so special, for she has tons of culinary technique to call upon, and she is both ambitious and hard-working. So, quail will be stuffed with wild boar and chestnuts; beef rib will be cooked for 16 hours in Meabh Rua craft beer and served with horseradish cream; she makes croquettes of Ballymakenny Farm violetta potatoes and Young Buck blue cheese, and she roasts butternut squash and serves it with Lebanese lentils. Ms Stone just loves the challenge of the kitchen, and the result is polished and perfect eating, in a simple but elemental setting.
