The Idle Wall
Áine Maguire has enjoyed two periods when her cooking has exerted a pivotal influence on modern Irish food. First up was when she birthed the new menus that announced the Winding Stair in Dublin. The second has been her cooking in The Idle Wall, down at the harbour, back home in Westport, County Mayo. Her focus here has shifted to the micro level – mussels from Kilmeena; clams from Clew Bay; North Mayo crab; Cuinneog butter; the local cluasíns (a type of shellfish). Some of her creations are already classics: the lamb and clam dish; beef bone consomme with oysters; potato dumplings with nettle butter; Martin Maguire’s beef burger; Cuinneog buttermilk panna cotta. It’s lovely, personal cooking, service is matronly and charming, and the room is one of the most enchanting on the West Coast.
