Pentland Dells and grilled courgettes. Lobster and wild garlic. Crab and rocket. Gooseberry and loganberry. Rhubarb and goat’s milk. In this gorgeous room, on each succeeding plate, you taste the elements of the island in the most elemental place imaginable, a place of rock and sea and sky. Serving this pared-back food to the 18 diners each evening allows Mr de Blacam complete control, as he and Marie-Therese orchestrate the evening’s menu to a quiet, defining conclusion.
