There is a new energy driving The Hibernian Hotel, one of the landmark destinations in the centre of Kilkenny city.

Mr Cullen, meantime, has brought the panche and inventivenss of his cooking to the comfortable room that is Harper’s Restaurant, and his signature dishes, such as the classic potted prawn and crabmeat cocktail with toasted sourdough, and the pork belly roulade with buttery champ potatoes, are dishes which show confidence and class.
