Tom O’Connell would make a great Premier League manager. He’s a great talent spotter, and always looking to strengthen his squad in different departments in O’Connell’s, bringing in Firehouse bread, and Irish Waters fish, and Kelly’s puddings. The latest signing is Pierre Heyraud, who cooked gorgeous food when in the little Blackboard Bistro in Dublin city centre, and M. Heyraud’s subtle and elegant style is just the right fit for the O’Connell’s template. Mr O’Connell himself is an old-style restaurateur who keeps himself forever up to date, so there is always something new to sample when you find yourself in the classic comfort of these lovely rooms. Mind you, it can be difficult not to choose their Josper oven roast chicken, or the Hereford beef, carved at the table, old style. Classy.
